There are so many amazing, healthy ingredients at our fingertips today. Unfortunately, many of the classic recipes we have come to know and love are stuck in the past. I am transforming the classics using healthier ingredients in order to bring family favorites to the table of today!


Oatmeal Scotchies

Delicious Oatmeal Cookies with Butterscotch Chips

Oatmeal scotchies are highly addictive and wonderfully delicious cookie! They are usually packed with butter and sugar. I'm going to show you how to make a delicious, protein packed, healthier version.


Ingredients

1 Scoop Vanilla Protein Powder

1 2/3 c Your Favorite Flour (If using Gluten Free Flour add 1t Xantham Gum)

1/2 c Flax Meal

1 t Baking Soda

1 t Baking Powder

3/4 t Salt

1 t Cinnamon

1/4 c

Coconut Oil

3/4 c Greek Yogurt

3/4 c Coconut Sugar

1 t Vanilla

3/4 c Butterscotch Chips

2 Eggs

3 c oats


Preheat oven to 375℉ (190℃).

Combine flour, baking soda, cinnamon and salt in small bowl.

Beat coconut oil, greek yogurt, sugar, eggs and vanilla in large mixing bowl.

Gradually beat in flour mix. Stir in oats and chips.

Drop by rounded tablespoon onto ungreased baking sheets.

Bake for 7 to 8 minutes for cookies that are chewy or 9 to 10 minutes for cookies that are crisp.

Cool on baking sheets for 2 minutes. Remove to wire racks to cool completely.

For bars, grease 15x10 inch pan. Spread cookie dough in pan.

Bake for 18 to 22 minutes or until light brown.

Cool completely in pan on wire rack. Cut into 48 bars.
